From our windows today, we could see snow being made on Mt Sunapee. Ski season is almost here, and for five years, Mt Sunapee has been voted to have the best ski conditions in the East. Our late summer raspberries are still sweet and prolific-enough for us and to share with the birds! Here is a recipe for some muffins that many of our guests have enjoyed munching on this summer:
Mix together: 1/4 cup dark brown sugar, 1/4 cup white sugar, 1 stick melted butter
Add 1 egg and 1/2 cup buttermilk
Quickly mix in dry ingredients: 1 1/2 cups flour, 2 tsp baking powder, 1/4 tsp salt, 1 tsp cinnamon
stir in: zest of a lemon, 1 1/4 cup fresh raspberries
place in 12 lined muffin tins
top each with struessel topping: mix 1/2 cup chopped nuts (pecans are nice), 1/2 cup dark brown sugar, 1/4 cup flour, 1 tsp lemon zest, 2 T melted butter-mix together until crumbly
Bake at 350 for 25 minutes.
Cool slightly and drizzle with a glaze of 1/2 cup confectioners sugar and 1 T lemon juice.
YUM!

At Sunapee View Bed and Breakfast, we are pleased to say that we work hard to ensure your room has been thouroughly cleaned following each guest. We all become a little squirmy when we see the news clips of high end hotels and lodging facillities where some pretty yucky stuff has been detected on bed spreads and other items in a room that looks clean to the eye. At our inn, following each stay, quilts, blankets and pillow shams are all laundered. Every surface including TV controls, drawer pulls and door handles are wiped down with a sanitizing solution. For your health and peace of mind, we keep it clean at Sunapee View Bed and Breakfast!

Italian Meatball Soup
Sautee in 2 T. Olive oil: 1 cup chopped onions, 1 cup diced celery, 1 cup sliced carrot, 1 cup chopped ham, 1 T. chopped garlic
Add and simmer: 2 boxes Swanson chicken broth, 2 tsp dried oregano (or 2 T fresh), 1 tsp crushed red pepper flakes, 1 bay leaf
Drop in about 3 dozen mini meatballs, uncooked (from your favorite recipe)
About 5 minutes prior to serving: Stir in 1 can drained canolini beans, 2 cups fresh chopped spinach, handful of chopped fresh parsley
Remove from heat and stir in 2 eggs beaten with 1/2 cup parmesan cheese
